I have a question - where are all the RMTEAM 720p encodes? They used to be consistently available for just about every show I follow - but lately they've been increasingly sporadic...

Please, please, PLEASE don't abandon 720p! The RMTEAM 720 (x265's) are my go to choices for most television. They're great!

Anyone else notice that all the 2160p RMTeam Uploads are all 2 Channel & not 6 Channel? Is this intentional?

Audio Codec: AAC @128Kbps, CBR, 2CH, 48KHz
2CH means two channel
It's on literally every rmteam encode.
We've noticed.
We also know that the Admin of this site is reluctant to correct any encoding mistake going forward.
On the off-chance that they will fix it the solution would be to remove "-c:a aac -b:a 128K -ac 2" and leave it blank.

That's bad advice.
A better very basic script would look like:

-map 0 -c:v libx265 -preset medium -profile main -crf 25 -pix_fmt yuv420p -vf "scale=3480:-2" -c:a copy -c:s copy

for FFMpeg encoders

I don't get why they would spend the time to do 2160p but then only do 2 Channels. Seems strange to me. If you are going to do high quality video the audio should also be the best.

My thinking exactly. Why bother? But RMTeam is releasing 2160p so anyone interested in 4K quality video would probably appreciate Dolby Surround.
I don't download 4K quality video myself, I just know how to fix the encode if that's what the site Admin wants to do. There are other options as well. All would make the file size of the RMTeam encode bigger.
If it's not a mistake then it is what it is.
